Comparative merchandising characteristics of dairy products based on secondary dairy raw materials produced by different enterprises

One of the ways to solve the problem of rational use of whey is the production of whey-based products.
Almost all trace elements and vitamins contained in milk pass into serum: potassium, magnesium, calcium, phosphorus, B vitamins, vitamin C, nicotinic acid, choline, vitamins A, E, biotin and probiotic bacteria.
Whey is a dairy product that comes from making cheese or cottage cheese. Whey is one of the most useful “by-products” of milk processing, which retains all its beneficial properties. Attaching great importance to milk as a universal therapeutic product, already in the distant past, doctors understood that the fat of whole milk and dairy products in the treatment of certain diseases is excessive, interfering with normal treatment and quick recovery. There was a desire to preserve all the main components of milk - proteins and mineral salts, but to free from fat. Skim milk, whey appeared as common therapeutic food dairy products. Already at that time all their advantages were known and determined when prescribing dietary nutrition to patients suffering from cardiovascular diseases and obesity (N.I. Dunchenko, 2007).
Daily consumption of 1 liter of whey satisfies 2/3 of the daily requirement of the body for calcium, 80% - in vitamin B2, 1/3 - in vitamins B1, B6, B12, 40% - in potassium.
Whey is approximately 93.7% water. But the remaining 6.3% includes all the best that is in milk. The main part of whey solids is lactose, milk sugar, which are easily absorbed by our body. Lactose is the “optimal” carbohydrate that least contributes to the formation of unwanted fat. Lactose also normalizes the activity of the gastrointestinal tract. On the one hand, whey practically does not contain fat (which means it is low-calorie), on the other hand, it is rich in valuable proteins.
Serum helps the body remove toxins and excess fluid, as well as break down harmful deposits without harming health. It perfectly satisfies hunger, due to which it can be used as an effective natural means for losing weight and the basis of various diets.
Whey plays an important role in clinical nutrition, especially for the elderly. By eating whey before meals, you can cope with a decrease in gastric secretion of hydrochloric acid. In the whey, growth factors were discovered - low molecular weight proteins that regulate the growth and renewal of cells. It exhibits antioxidant activity, which slows down the aging process. Serum is recommended for men as a means of delivering proteins for muscle mass (it is an unchanged component of the nutrition of athletes). To strengthen immunity, it is recommended to drink a glass of serum per day.
The biological value of secondary dairy raw materials is “a minimum of calories with a maximum of biological value” (prof. KS Petrovsky).
The purpose of research in the work was a qualitative assessment of products based on secondary dairy raw materials.
The tasks were:
1. To determine the organoleptic and physico-chemical characteristics of products based on secondary milk raw materials;
2. Compare the obtained indicators of products of different manufacturers with the requirements of technical specifications, the Technical regulations for milk and dairy products and establish their compliance (or non-compliance) with regulatory documents.
The research material was samples of a whey beverage with fruit juice, pasteurized whey, dry and skimmed milk whey, produced by Chebarkul MZ OJSC, pasteurized whey drink with juice manufactured by UNIMILK Company, sterilized whey beverage with juice manufactured by Sterlitamak Dairy Plant OJSC ", Whey of pasteurized milk of Troitsk Dairy Plant OJSC.
Organoleptic indicators (appearance, consistency, color, taste and
smell).
The packaging of all products is clean, intact, has hermetically sealed seams, without damage, is framed accordingly.
Powdered whey and skimmed milk powder are packed in a paper bag (25 kg), milk is additionally packaged in a bag of film material (500 g). A pasteurized whey drink with juice produced by the Chebarkul plant is packaged in a 0.5 L Pyur-Pak paper bag, manufactured by UNIMILK Company OJSC (AKTUAL), and a sterilized whey drink with juice manufactured by Sterlitamak Milk OJSC Combine "is packed in a package of combined material of the type" Tetra-Brick-Aseptic ".
During the survey, it was found that whey drink with fruit juice is in great demand among consumers (56%) than pasteurized whey (18%). They explain their choice by the fact that the drink is tastier, it is drunk not only by adults, but also by children, and pasteurized whey is rarely consumed. Only 28% of respondents are aware of the beneficial properties of these products, so products need to be advertised.
The organoleptic characteristics of the studied products correspond to those of the Technical Regulations for milk and dairy products.
But the whey drink pasteurized with peach juice, manufactured by Chebarkul Dairy Plant OJSC, was distinguished by the best taste, although in appearance the drink was inferior to the drink of UNIMILK Company OJSC due to the lack of dyes.
